After a brief introduction to the ancient diet – in particular its grains – and the historic events of the Senones in Le Marche, the chef will explain the dish to be prepared: a special archaeo-recipe – Senone bread and meatballs with dried figs.
Under the chef’s guidance, hands mash up the ingredients to prepare the meatballs, using millet as its grain. Dried figs are then added to the dish. The result is a ready-to-taste dish that balances protein, carbohydrates and vitamins, while also staying true to the ancient recipe.
